Ingredients

3 pounds potatoes (Yukon Gold or Russet), peeled and thinly sliced

1 medium onion, finely chopped

4 cloves garlic, minced

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

2 cups heavy cream

1 cup vegetable broth

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/2 tsp dried thyme

1 tbsp fresh parsley, chopped (for garnish)

Instructions

Prepare the Potatoes: Begin by peeling and thinly slicing your potatoes. A mandoline works great for this to ensure even slices.

Layer Ingredients: In your crockpot, start layering. First, add a layer of sliced potatoes, then sprinkle some of the chopped onions and minced garlic evenly over the potatoes. Follow with a layer of cheese (combine both cheddar and mozzarella) and season with salt, pepper, paprika, and thyme. Repeat the layering process until all the ingredients are used, finishing with a layer of cheese on top.

Combine Cream and Broth: In a medium bowl, whisk together the heavy cream and vegetable broth. Pour this mixture evenly over the layered potatoes in the crockpot, ensuring all layers are moistened.

Cook in the Crockpot: Cover the crockpot with the lid and set it to low. Cook for about 6-8 hours, or until the potatoes are tender and the cheese is bubbly.

Final Touch: Once cooked, remove the lid and let it sit for about 15 minutes to firm up before serving. This will help the dish hold its shape when scooped.

Garnish: Sprinkle chopped fresh parsley over the top for a burst of color and freshness.
