Ingredients

1 lb boneless, skinless chicken breasts

4 cups frozen corn (or fresh corn kernels if in season)

1 medium onion, chopped

2 cloves garlic, minced

3 medium potatoes, diced (about 2 cups)

2 cups chicken broth

1 cup heavy cream (or coconut cream for a dairy-free option)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)

Optional toppings: crispy bacon bits, green onions, or additional cheese

Instructions

Prep the Chicken: Place the boneless, skinless chicken breasts at the bottom of the Crockpot. Season generously with salt, pepper, thyme, and smoked paprika.

Add Vegetables: Layer the frozen corn, chopped onion, minced garlic, and diced potatoes over the chicken.

Pour in Broth: Gently pour the chicken broth over the top of the veggies and chicken, ensuring that everything is submerged.

Cook: Cover the Crockpot with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and can be easily shredded.

Shred the Chicken: After cooking time is up, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the pot.

Add Cream: Stir in the heavy cream (or coconut cream) and mix until well combined. If you've chosen to include cheese, add it at this point and stir until melted and incorporated.

Adjust Seasoning: Taste the chowder and adjust seasonings with more salt, pepper, or spices if desired.

Serve: Ladle the chowder into bowls and garnish with fresh parsley and any optional toppings like crispy bacon, green onions, or additional cheese.

Enjoy: Serve the chowder warm with crusty bread or crackers for a comforting meal!
