1 pound cooked turkey, shredded (rotisserie or leftover)

1 cup wild rice blend (rinsed)

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

8 cups low-sodium chicken broth

1 cup heavy cream or coconut cream (for a dairy-free option)

1 cup frozen peas

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Base: In the crockpot, combine the diced onion, carrots, celery, and garlic. Stir to mix evenly.

    Add the Rice and Seasonings: Add the rinsed wild rice, dried thyme, dried rosemary, bay leaf, and shredded turkey to the crockpot. Season generously with salt and pepper.

      Pour in the Broth: Add the chicken broth to the mixture, ensuring that all ingredients are submerged. Stir gently to incorporate.

        Cook the Soup: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the wild rice is tender and the flavors meld together.

          Finish with Cream and Peas: About 30 minutes before serving, stir in the heavy cream and frozen peas. Allow the soup to continue cooking until heated through.

            Adjust Seasoning: Taste the soup and adjust salt and pepper as needed. Remove the bay leaf before serving.

              Serve and Garnish: Ladle the soup into bowls and garnish with freshly chopped parsley. Enjoy warm with a side of crusty bread!
