Crunchy Greek Chickpea Salad

1 can (15 oz) chickpeas, rinsed and drained

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red, yellow, or orange), diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled (optional for a vegan version)

1 avocado, diced

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

1/2 cup sunflower seeds or pumpkin seeds, for crunch

Prepare the Ingredients: Start by rinsing and draining the chickpeas. Halve the cherry tomatoes, dice the cucumber and bell pepper, finely chop the red onion, and halve the olives.

    Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, and a pinch of salt and pepper. Adjust seasoning to taste.

      Combine the Salad: In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, olives, and avocado. Gently toss the ingredients together.
