Crunchy Maple Nut Clusters

Ingredients
  

1 cup mixed nuts (almonds, pecans, cashews, walnuts)

1 cup rolled oats

1/2 cup maple syrup

1/4 cup almond butter (or peanut butter)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

1/4 cup dried cranberries or raisins (optional)

1/2 cup dark chocolate chips (optional, for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Nuts: In a large bowl, combine the mixed nuts and rolled oats. If you're adding cinnamon, mix it in here.

      Mix Wet Ingredients: In a separate bowl, whisk together the maple syrup, almond butter, vanilla extract, and salt until smooth.

        Combine Mixtures: Pour the wet mixture over the dry ingredients (nuts and oats). Stir until everything is evenly coated. If you want to add dried cranberries or raisins, fold them in now.

          Form Clusters: Using your hands, form small clusters of the mixture and place them on the prepared baking sheet, leaving some space between each cluster.

            Bake: Bake in the preheated oven for about 15-20 minutes, or until the clusters are golden brown. Keep an eye on them to prevent burning.

              Cool Down: Remove from the oven and let them cool on the baking sheet for about 10 minutes. They will become crunchier as they cool.

                Drizzle Chocolate (Optional): If using dark chocolate, melt the chocolate chips in the microwave in 30-second intervals, stirring until smooth. Once the clusters are cool, drizzle the melted chocolate over the top using a spoon or a piping bag.

                  Store: Once completely cooled, store your Crunchy Maple Nut Clusters in an airtight container. They will keep for up to a week.
