Crunchy Ramen Noodle Chicken Salad

2 packs of instant ramen noodles (discard seasoning packets)

2 cups shredded rotisserie chicken

1 cup shredded red cabbage

1 cup matchstick carrots

1 cup snap peas, trimmed

½ cup green onions, chopped

½ cup slivered almonds (or sunflower seeds for a nut-free option)

½ cup fresh cilantro, chopped (optional)

For the Dressing:

¼ cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 clove garlic, minced

1 teaspoon fresh ginger, grated

Black pepper to taste

Instructions
 

Cook the Noodles: In a large pot, bring water to a boil. Add the ramen noodles and cook for about 3-4 minutes, or until tender. Drain and rinse with cold water to stop the cooking process. Set aside.

    Prep the Dressing: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, and black pepper until well combined. Taste and adjust seasoning if necessary.

      Assemble the Salad: In a large mixing bowl, combine the cooked ramen noodles, shredded chicken, red cabbage, matchstick carrots, snap peas, and green onions.

        Add the Dressing: Pour the dressing over the salad mixture and toss gently to combine, ensuring all ingredients are evenly coated.
