Crunchy Ranch Chickpea Tacos

1 can (15 oz) chickpeas, rinsed and drained

2 tablespoons olive oil

1 tablespoon ranch seasoning (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup chopped fresh cilantro

Lime wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: In a large mixing bowl, combine the rinsed and drained chickpeas with olive oil, ranch seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss well until the chickpeas are evenly coated.

      Roast Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through, until chickpeas are golden brown and crispy.

        Warm Tortillas: While the chickpeas roast, warm the tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side or wrapping them in foil and placing them in the oven for the last 5 minutes of the chickpea roasting time.

          Assemble Tacos: Once the chickpeas are crispy, remove them from the oven. To assemble each taco, place a generous spoonful of the crunchy chickpeas in the center of a tortilla. Top with shredded lettuce, diced tomatoes, cheese, and fresh cilantro.

            Serve: Serve the tacos with lime wedges on the side for an extra burst of flavor. Enjoy your meal!
