Ingredients

1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

1/2 teaspoon ground cumin

1/2 teaspoon sea salt

1/4 teaspoon black pepper

Optional: 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Chickpeas: Drain and rinse the chickpeas under cold water, then pat them dry with a kitchen towel. Make sure they are as dry as possible, as this will help them crisp up in the oven.

Season the Chickpeas: In a large mixing bowl, combine the dried chickpeas with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, ground cumin, sea salt, and black pepper. Toss everything together until the chickpeas are evenly coated with the oil and spices.

Spread on Baking Sheet: Spread the seasoned chickpeas in a single layer on the prepared baking sheet, ensuring they are not overcrowded.

Bake: Bake in the preheated oven for 25-30 minutes, or until the chickpeas are golden brown and crunchy. Shake the baking sheet halfway through the cooking time to promote even cooking.

Cool and Serve: Once done, remove from the oven and let them cool for a few minutes. They will continue to crisp up as they cool. Optionally, sprinkle with fresh parsley for a pop of color before serving.

Enjoy: Serve these crunchy, spicy baked chickpeas as a snack, a salad topper, or a savory addition to your favorite grain bowls!
