1 cup red cabbage, shredded

2 tablespoons apple cider vinegar

1 tablespoon lime juice

1 tablespoon honey or maple syrup

1 tablespoon Dijon mustard

1 teaspoon cumin powder

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for extra heat)

1/2 cup sunflower seeds (for crunch)

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the grated carrots, shredded red cabbage, sliced green bell pepper, and finely sliced red onion. Add the chopped cilantro and mix well.

    Make the Dressing: In a separate bowl, whisk together the mayonnaise, apple cider vinegar, lime juice, honey (or maple syrup), Dijon mustard, cumin powder, salt, black pepper, and cayenne pepper until smooth and well combined.

      Combine: Pour the dressing over the vegetable mixture and toss until everything is evenly coated with the dressing.
