1 large cucumber, diced

1 can (15 oz) chickpeas, drained and rinsed

1 cup plain Greek yogurt (or dairy-free alternative)

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 clove garlic, minced

¼ teaspoon ground cumin

½ teaspoon salt (adjust to taste)

Freshly ground black pepper, to taste

¼ cup red onion, finely chopped

¼ cup fresh parsley, chopped

Optional: a pinch of cayenne pepper for heat

Prepare the Cucumber: Start by washing the cucumber thoroughly. Cut both ends off and dice it into small, bite-sized pieces. If the skin is thick, you may peel it before dicing, but leaving the skin on adds a nice crunch and color.
