For the Chicken Marinade:

1 lb (450 g) boneless chicken thighs, cut into strips

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 tablespoon red wine vinegar

2 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

For the Tzatziki Sauce:

1 cup plain Greek yogurt

1 small cucumber, grated and excess water removed

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon olive oil

1 tablespoon fresh lemon juice

Salt and pepper to taste

For Assembly:

Pita bread or flatbreads

Sliced tomatoes

Sliced red onion

Shredded lettuce

Feta cheese, crumbled (optional)

Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, pepper, and smoked paprika. Add the chicken strips and toss to coat. Cover and refrigerate for at least 1 hour (or up to overnight) for maximized flavor.

    Prepare Tzatziki Sauce: In a mixing bowl, combine the Greek yogurt, grated cucumber, garlic, dill, olive oil, lemon juice, and season with salt and pepper. Stir until smooth, then cover and refrigerate to allow flavors to meld while you cook the chicken.

      Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Remove chicken from marinade, allowing excess marinade to drip off.
