1 pound boneless, skinless chicken thighs (cut into 1-inch cubes)

3 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

2 cloves garlic (minced)

1 teaspoon ginger (grated)

1 tablespoon red curry paste

1 tablespoon sesame oil

1 tablespoon fresh cilantro (chopped, plus extra for garnish)

Skewers (soaked in water for at least 30 minutes if using wooden skewers)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, red curry paste, sesame oil, and chopped cilantro. Whisk until well combined.

    Add Chicken: Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.

      Prepare for Grilling: Preheat your grill to medium-high heat (about 400°F/200°C). Thread the marinated chicken onto the soaked skewers, leaving a little space between each piece for even cooking.

        Grill the Skewers: Place the skewers on the preheated grill. Cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
