Ingredients

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup all-purpose flour

1 tablespoon baking powder

½ cup unsalted butter, melted

1 cup hot honey (store-bought or homemade)

12 flaky biscuits (homemade or store-bought)

Fresh parsley, for garnish (optional)

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the chicken thighs to the marinade, coating them well. Cover and refrigerate for at least 30 minutes or up to 4 hours.

Prepare the Biscuits: If using homemade biscuits, prepare your favorite recipe or follow the instructions on the biscuit package. Preheat the oven according to the biscuit instructions. Bake the biscuits until golden brown and set aside.

Cook the Chicken: Heat a skillet over medium-high heat. Remove the chicken from the buttermilk marinade and let the excess drip off. In a separate bowl, combine the flour and baking powder. Dredge the chicken thighs in the flour mixture until well coated.

Fry the Chicken: Add a tablespoon of oil to the skillet and cook the chicken thighs for about 5-7 minutes on each side until they are golden brown and cooked through, reaching an internal temperature of 165°F (75°C). Remove from the skillet and let rest on a paper towel to absorb excess oil.

Assemble the Biscuits: Slice each biscuit in half. Drizzle a generous amount of hot honey on the bottom half of each biscuit. Place a piece of fried chicken on top, then drizzle more hot honey over the chicken.

Finish Up: Add the biscuit tops and optionally sprinkle with fresh parsley for an extra touch. Serve immediately while warm, alongside extra hot honey for dipping!
