4 cups whole milk

1/2 cup granulated sugar

1/4 cup raisins (optional)

Zest of 1 lemon

Rinse the Rice: Start by rinsing the Arborio rice under cold water until the water runs clear. This step helps to remove excess starch and prevent the pudding from becoming too gummy.

    Combine Ingredients: In a medium-sized saucepan, combine the rinsed rice, milk, sugar, salt, and cinnamon. If you're using raisins, add them at this stage.

      Cook the Mixture: Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring frequently to prevent the rice from sticking to the bottom.
