Ingredients

2 medium zucchinis, sliced into rounds or half-moons

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for a kick)

1 tablespoon balsamic vinegar (optional, for tanginess)

Fresh basil leaves or parsley, chopped (for garnish)

Instructions

Prep the Zucchini: Wash the zucchinis under cold water and pat them dry. Slice them into rounds about 1/4 inch thick or half-moons, depending on your preference.

Heat the Pan: In a large skillet, heat the olive oil over medium heat. Allow it to warm for about 1 minute until it shimmers.

Sauté Garlic: Add the minced garlic to the pan and sauté for about 30 seconds, stirring frequently, until fragrant. Be careful not to burn the garlic.

Cook the Zucchini: Add the sliced zucchini to the skillet, stirring gently to coat them with the garlic and oil. Season with salt, black pepper, and red pepper flakes if using.

Sauté Until Tender: Cook the zucchini for about 5-7 minutes, stirring occasionally, until they are tender and lightly browned. You want them to retain some of their crunch, so avoid overcooking.

Add Balsamic Vinegar: If desired, drizzle the balsamic vinegar over the zucchini in the last minute of cooking. Stir well to combine.

Garnish and Serve: Remove from heat, and transfer to a serving dish. Garnish with fresh basil or parsley before serving.
