Easy Shrimp Spring Rolls

Ingredients
  

1 lb large shrimp, peeled and deveined

8 rice paper wrappers

2 cups mixed salad greens (such as romaine, spinach, and arugula)

1 medium cucumber, julienned

1 large carrot, julienned

1 avocado, sliced

1/4 cup fresh mint leaves

1/4 cup fresh cilantro leaves

1/4 cup fresh basil leaves

1/2 cup vermicelli rice noodles, cooked and cooled

1 lime, juiced

Salt and pepper to taste

Optional: hoisin sauce or peanut sauce for dipping

Instructions
 

Prep the Shrimp: In a medium saucepan, bring water to a boil. Add the shrimp and cook for about 2-3 minutes, or until they turn pink and opaque. Drain and run under cold water to stop the cooking process. Pat dry and season with lime juice, salt, and pepper. Set aside.

    Prepare the Wrapping Station: Fill a large shallow dish with warm water. This will be used to soften the rice paper wrappers.

      Soften the Rice Paper: Take one rice paper wrapper and dip it into the warm water for about 10-15 seconds, or until it becomes pliable but not too soft. Lay it flat on a clean work surface.

        Assemble the Spring Rolls: Arrange a small handful of salad greens, a few julienned cucumber sticks, carrot sticks, one avocado slice, a small amount of vermicelli noodles, and a few shrimp pieces in the center of the softened rice paper. Top with fresh mint, cilantro, and basil leaves.

          Roll Them Up: Fold the sides of the rice paper over the filling, then starting from the bottom, carefully roll the wrapper up tightly to enclose the filling. Repeat with the remaining ingredients.

            Serve: Arrange the spring rolls on a platter and serve with hoisin sauce or peanut sauce for dipping.
