1 lb (450g) boneless, skinless chicken thighs (or breasts), cubed

1 cup uncooked jasmine rice

2 cups water or chicken broth

½ cup teriyaki sauce (store-bought or homemade)

1 tablespoon vegetable oil

2 cloves garlic, minced

1-inch piece fresh ginger, grated

2 cups broccoli florets (fresh or frozen)

½ cup carrot, julienned (or shredded)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Cook the Jasmine Rice: In a medium saucepan, combine the jasmine rice with 2 cups of water or chicken broth. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork before serving.

    Prepare the Chicken: While the rice is cooking, heat vegetable oil in a large skillet or wok over medium-high heat. Season the cubed chicken with salt and pepper, then add it to the pan. Sauté the chicken for about 5 to 7 minutes, or until it’s golden brown and cooked through. Ensure it's no longer pink in the center.
