Feta & Cranberry Rigatoni Salad

12 oz (340g) rigatoni pasta

1 cup (150g) crumbled feta cheese

1 cup (150g) dried cranberries

1 cup (150g) cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/4 cup (60ml) extra virgin olive oil

2 tablespoons (30ml) balsamic vinegar

1 tablespoon (15ml) honey

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Rigatoni: In a large pot of boiling salted water, cook the rigatoni according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper. Taste and adjust seasoning as necessary.

      Combine Ingredients: In a large mixing bowl, combine the cooled rigatoni, crumbled feta, dried cranberries, cherry tomatoes, cucumber, and red onion.
