2 cups ramen noodles

1 lb boneless chicken thighs, sliced

1 tablespoon vegetable oil

4 cups chicken broth

2 tablespoons soy sauce

1 tablespoon miso paste (optional for depth)

1 tablespoon chili paste or gochujang (adjust for heat)

1 tablespoon sesame oil

4 green onions, sliced

2 cloves garlic, minced

1-inch piece ginger, grated

2 large eggs (optional)

1 cup baby spinach

1 cup mushrooms, sliced (shiitake or button)

Red pepper flakes (to taste)

Fresh cilantro, for garnish

Instructions
 

Prep the Chicken: In a mixing bowl, marinate the sliced chicken thighs with soy sauce, chili paste, and a sprinkle of red pepper flakes. Allow it to sit for at least 15 minutes.

    Cook the Eggs (If Using): Bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes for a soft center. Once done, transfer them to an ice bath to cool before peeling.

      Cook the Chicken: In a large pot or skillet, heat the vegetable oil over medium-high heat. Add the marinated chicken pieces, cooking until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.

        Sauté Aromatics: In the same pot, add sesame oil, minced garlic, grated ginger, and sliced mushrooms. Sauté for about 3-4 minutes until the mushrooms are tender and fragrant.

          Build the Broth: Pour in the chicken broth, stirring in the miso paste until dissolved. Bring the mixture to a simmer, then add the cooked chicken back into the broth.

            Cook the Noodles: In a separate pot, cook the ramen noodles according to package instructions. Once cooked, drain and set aside.

              Add Greens and Finish Broth: Stir in the baby spinach and a handful of sliced green onions. Allow everything to simmer for another 2-3 minutes until the spinach is wilted.

                Assemble the Bowl: Divide the ramen noodles among serving bowls. Ladle the hot broth and chicken over the noodles. Top with a halved soft-boiled egg, additional sliced green onions, red pepper flakes, and fresh cilantro for garnish.
