1 lb (about 450g) carrots, peeled and cut into sticks or rounds

3 tablespoons harissa paste

2 tablespoons olive oil

1 tablespoon honey or maple syrup

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and black pepper, to taste

Fresh cilantro or parsley, for garnish

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Carrots: In a large bowl, combine the grated carrots with olive oil, honey (or maple syrup), harissa paste, ground cumin, garlic powder, salt, and black pepper. Mix well until the carrots are evenly coated with the mixture.

      Arrange on Baking Sheet: Spread the seasoned carrots in a single layer on a baking sheet lined with parchment paper. Ensure the carrots are not overcrowded to promote even roasting.
