1 pound boneless, skinless chicken thighs

1 tablespoon vegetable oil

2 tablespoons soy sauce

2 tablespoons Sriracha sauce (adjust to taste)

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (canned or fresh)

1 red bell pepper, diced

1 avocado, sliced

½ cup shredded cheese (cheddar or Mexican blend)

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Optional toppings: diced tomatoes, sour cream, jalapeños

Instructions
 

Prepare the Chicken: In a bowl, mix together the soy sauce, Sriracha, honey, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs, coating them well in the marinade. Allow to marinate for at least 30 minutes (or overnight in the fridge for maximum flavor).

    Cook the Chicken: Heat vegetable oil in a large skillet over medium heat. Remove the chicken from the marinade (reserve the marinade) and add to the skillet. Cook for about 5-7 minutes per side, or until the chicken is cooked through (internal temperature should reach 165°F / 75°C).

      Add Sauce: Once the chicken is cooked, pour the reserved marinade into the skillet. Bring to a simmer and cook for an additional 2-3 minutes, letting the sauce reduce slightly and glaze the chicken.

        Slice the Chicken: Remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.

          Assemble the Bowls: In a large bowl, start with a base of cooked rice. Top with black beans, corn, diced red bell pepper, sliced avocado, and sliced firecracker chicken.
