1 cup pumpkin puree (canned or fresh)

1 cup buttermilk (or milk with 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1 teaspoon vanilla extract

Maple syrup (for drizzling)

Whipped cream (optional, for serving)

Prepare the Buttermilk (if needed): If you're using regular milk, combine 1 cup of milk with 1 tablespoon of vinegar in a small bowl and let it sit for 5 minutes to thicken.

    Whisk Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. This helps incorporate air into the dry ingredients, making the pancakes fluffy.

      Mix Wet Ingredients: In another bowl, mix the pumpkin puree, buttermilk, egg, melted butter, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, gently folding them together with a spatula. Be cautious not to overmix; it’s okay if there are a few lumps. Overmixing can result in dense pancakes.
