4 boneless, skinless chicken breasts

2 large onions, thinly sliced

4 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon butter

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 cup chicken broth

1 cup shredded Gruyère cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Chicken: In a large skillet over medium-high heat, add the olive oil and half of the butter. Season the chicken breasts with salt and pepper. Once the oil is hot, add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

    Caramelize the Onions: In the same skillet, melt the remaining butter. Add the sliced onions and a pinch of salt. Cook on medium-low heat, stirring regularly, for about 15-20 minutes until the onions are caramelized and golden brown.

      Add Garlic and Thyme: Once the onions are caramelized, add the minced garlic and thyme. Cook for an additional 1-2 minutes until the garlic is fragrant.

        Deglaze the Pan: Add the balsamic vinegar to the skillet and scrape up any brown bits from the bottom. Stir in the chicken broth and let the mixture simmer for about 3-4 minutes.

          Combine and Cook: Return the seared chicken to the skillet, spooning some of the onion mixture over the top. Sprinkle the shredded Gruyère cheese evenly over the chicken. Cover and cook for another 5 minutes, or until the cheese is melted and bubbly.

            Serve: Garnish with fresh parsley before serving. This dish pairs wonderfully with crusty bread or over a bed of rice or mashed potatoes.
