Ingredients

For the French Toast:

4 slices of thick-cut bread (Challah or Brioche recommended)

2 large eggs

1/2 cup milk

1 tsp vanilla extract

1/2 tsp ground cinnamon

A pinch of salt

Butter (for frying)

For the Chicken:

2 boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Oil (for frying)

For Assembly:

4 slices of sharp cheddar cheese

Maple syrup (for drizzling)

Fresh arugula or spinach (optional)

Hot sauce (optional)

Instructions

Marinate the Chicken:

    - In a bowl, submerge the chicken breasts in buttermilk and let them marinate for at least 30 minutes (or up to 2 hours) in the refrigerator. This will make them tender and juicy.

      Prepare the Chicken Coating:

        - In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and pepper. Set aside.

          Fry the Chicken:

            - Heat oil in a large skillet over medium-high heat.

              - Take the chicken breasts out of the buttermilk, allowing any excess to drip off, then coat them in the flour mixture.

                - Carefully place the coated chicken in the hot oil and fry for about 5-6 minutes per side or until golden brown and cooked through. Once done, remove and place on paper towels to drain excess oil.

                  Make the French Toast:

                    - In a bowl, whisk together the eggs, milk, vanilla, cinnamon, and a pinch of salt.

                      - Heat a skillet over medium heat and add a bit of butter.

                        - Dip each slice of bread into the egg mixture, coating both sides. Cook in the melted butter until golden brown on both sides, about 2-3 minutes per side.

                          - Place two slices of cooked French toast in the skillet and layer two slices of cheddar cheese on top. Cover the skillet to let the cheese melt slightly.

                            Assemble the Sandwich:

                              - Take one slice of French toast and place a piece of fried chicken on top. Add fresh arugula or spinach if desired, then drizzle with maple syrup and hot sauce.

                                - Top with the second slice of French toast with melted cheese, pressing down gently.

                                  Serve and Enjoy:

                                    - Cut the sandwich in half and serve immediately with extra maple syrup on the side if desired. Enjoy your decadent French Toast Chicken Sandwich!
