Ingredients

2 cups fresh or frozen blueberries

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust for sweetness)

1/4 cup freshly squeezed lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional toppings: granola, chopped nuts, or coconut flakes

Instructions

Prepare the Blueberries: If using fresh blueberries, rinse and drain them. If using frozen, thaw and drain excess liquid.

Blend the Mixture: In a blender or food processor, combine the blueberries, yogurt, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and salt. Blend until smooth, ensuring there are still some blueberry chunks for texture.

Taste and Adjust: Taste the mixture and adjust sweetness if necessary, adding more honey or maple syrup if desired.

Prepare the Pan: Line an 8x8-inch (or similar size) baking dish with parchment paper, leaving some overhang for easy removal later.

Pour and Spread: Pour the yogurt mixture into the prepared baking dish. Use a spatula to spread it evenly, smoothing out the top.

Add Toppings (Optional): If desired, sprinkle granola, chopped nuts, or coconut flakes evenly over the top for added crunch and flavor.

Freeze the Bars: Cover the baking dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4-6 hours or until completely firm.

Slice and Serve: Once frozen, remove from the freezer. Lift the bars out using the overhanging parchment paper. Use a sharp knife to cut the slab into squares or bars.

Store or Enjoy: Enjoy the bars immediately or store them in an airtight container in the freezer for up to 2 weeks.
