Ingredients
  

1 lb large shrimp, peeled and deveined

1 cup jasmine rice

2 tbsp unsalted butter

4 cloves garlic, minced

2 tbsp olive oil

1 tsp red pepper flakes (adjust to taste)

1 medium lemon, zested and juiced

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

1 cup broccoli florets (or any vegetable of choice)

Optional toppings: avocado slices, sesame seeds, lime wedges

Instructions
 

Cook the Rice:

    - Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil over high heat.

      - Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is cooked and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork.

        Prepare the Vegetables:

          - In a small pot, bring water to a boil and blanch the broccoli florets for about 2-3 minutes until they turn bright green. Drain and set aside.

            Cook the Shrimp:

              - In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes on one side until they turn pink.

                - Flip the shrimp, add the minced garlic and red pepper flakes. Pour in the lemon juice and zest, and add 2 tbsp of butter. Stir until the shrimp are cooked through and the garlic is fragrant, about another minute.

                  Assemble the Bowls:

                    - Divide the cooked jasmine rice among bowls. Top each bowl with the garlic butter shrimp and the blanched broccoli. Sprinkle fresh chopped parsley on top for garnish.

                      Optional Toppings:

                        - For an extra touch, add avocado slices, a sprinkle of sesame seeds, and garnish with lime wedges to enhance the flavors.
