1.5 lbs flank steak (or your preferred cut)

1.5 lbs baby potatoes, halved

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped (plus more for garnish)

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon

Instructions
 

Preheat the Oven:

    Preheat your oven to 425°F (220°C).

      Prepare the Garlic Butter:

        In a small bowl, combine the melted butter, minced garlic, parsley, rosemary, thyme, lemon zest, and lemon juice. Set aside.

          Season the Steak:

            Season the flank steak generously with salt and pepper on both sides. Set aside to marinate for a moment while you prepare the potatoes.

              Toss the Potatoes:

                In a large bowl, combine the halved baby potatoes with olive oil, salt, and pepper. Mix well to ensure the potatoes are evenly coated.

                  Roast the Potatoes:

                    Spread the seasoned potatoes evenly on one side of a large sheet pan. Roast in the preheated oven for 20 minutes.

                      Sear the Steak:

                        While the potatoes are roasting, heat a skillet over medium-high heat. Sear the flank steak for about 2-3 minutes on each side until browned.

                          Combine Everything:

                            After the potatoes have roasted for 20 minutes, remove the pan from the oven. Add the seared steak to the pan, and pour the garlic butter mixture over both the steak and potatoes, making sure to coat everything evenly.

                              Finish Roasting:

                                Return the sheet pan to the oven and roast for an additional 10-15 minutes, or until the steak reaches your desired doneness (130°F for medium-rare).

                                  Rest and Serve:

                                    Remove the sheet pan from the oven and let the steak rest for about 5 minutes. Slice the steak against the grain, serve with the roasted garlic butter potatoes, and garnish with additional parsley.
