2 pounds baby potatoes, halved

1/2 cup mayonnaise

1/2 cup Greek yogurt

3 cloves garlic, minced

2 tablespoons fresh chives, finely chopped

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh dill, finely chopped

1 tablespoon Dijon mustard

2 teaspoons apple cider vinegar

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon smoked paprika (optional)

1/4 cup red onion, finely diced

1/2 cup cherry tomatoes, halved (for garnish)

Fresh herbs for garnish (optional)

Instructions
 

Boil the Potatoes: Place the halved baby potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Reduce heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender but not mushy. Drain and set aside to cool.

    Prepare the Dressing: In a mixing bowl, combine the mayonnaise, Greek yogurt, minced garlic, chives, parsley, dill, Dijon mustard, apple cider vinegar, salt, black pepper, and smoked paprika (if using). Whisk together until smooth and well blended.

      Combine Potatoes and Dressing: Once the potatoes have cooled enough to handle, transfer them to a large mixing bowl. Add the dressing and gently fold until the potatoes are coated evenly. Be careful not to break the potatoes.

        Add Red Onion: Gently stir in the finely diced red onion for an extra crunch and flavor. Adjust salt and pepper to taste.

          Chill the Salad: Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.

            Serve and Garnish: Before serving, stir the salad gently and garnish with halved cherry tomatoes and additional fresh herbs if desired.
