Ingredients

1 pound ground chicken

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably Italian-style)

1/4 cup fresh parsley, finely chopped

2 large cloves garlic, minced

1 egg, lightly beaten

1/4 cup milk

1 teaspoon dried oregano

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup marinara sauce (for topping)

Extra grated Parmesan cheese (for garnish)

Fresh parsley leaves (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it for easy clean-up.

Mix Ingredients: In a large mixing bowl, combine the ground chicken, grated Parmesan cheese, breadcrumbs, chopped parsley, minced garlic, beaten egg, milk, oregano, onion powder, salt, and black pepper. Use your hands or a sturdy spatula to mix until everything is well incorporated, but be careful not to overmix.

Shape the Meatloaves: Divide the mixture into four equal portions. Shape each portion into a small loaf (about 4 inches long) and place them on the prepared baking sheet, ensuring they have some space between them for even cooking.

Add Marinara topping: Spoon a tablespoon of marinara sauce onto the top of each meatloaf, spreading it gently to cover the surface.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes or until the internal temperature of the meatloaves reaches 165°F (74°C) and they are golden brown on top.

Garnish and Serve: Once cooked, remove the meatloaves from the oven. Let them rest for a few minutes before transferring to a platter. Sprinkle additional grated Parmesan cheese and fresh parsley on top for an extra touch.

Enjoy: Serve the Garlic Parmesan Chicken Meatloaves with a side of steamed vegetables, mashed potatoes, or a fresh salad. Enjoy your delicious and hearty meal!
