Ginger Soy Glazed Meatballs

1 pound ground meat (beef, pork, or chicken)

1/4 cup breadcrumbs (panko preferred)

1/4 cup green onions, finely chopped

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 large egg

2 tablespoons soy sauce (low sodium)

1 tablespoon sesame oil

1 tablespoon honey or brown sugar

1/2 teaspoon black pepper

1 teaspoon salt

1 tablespoon vegetable oil (for frying)

For the Glaze:

1/3 cup soy sauce (low sodium)

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon fresh ginger, grated

1 teaspoon cornstarch mixed with 1 tablespoon water (slurry for thickening)

Sesame seeds for garnish

Additional chopped green onions for garnish

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground meat, breadcrumbs, chopped green onions, grated ginger, minced garlic, egg, soy sauce, sesame oil, honey or brown sugar, black pepper, and salt. Mix until well combined but avoid overmixing.

    Form the Meatballs: Shape the mixture into meatballs, about 1-1.5 inches in diameter. Place them on a tray lined with parchment paper.

      Cook the Meatballs: Heat vegetable oil in a large skillet over medium heat. Add meatballs in batches, cooking for about 6-8 minutes, turning occasionally until browned on all sides and cooked through.

        Make the Ginger Soy Glaze: In a small saucepan, whisk together soy sauce, honey, rice vinegar, and grated ginger. Bring to a simmer over medium heat.

          Thicken the Glaze: Once the glaze starts bubbling, add the cornstarch slurry and stir until the sauce thickens, about 1-2 minutes. Remove from heat.

            Glaze the Meatballs: Add the cooked meatballs to the glaze in the skillet, tossing gently to coat them evenly in the sauce.
