4 medium green tomatoes, sliced into 1/4-inch thick rounds

1 cup buttermilk

1 cup cornmeal

1/2 cup all-purpose flour

1 teaspoon paprika

1/2 teaspoon cayenne pepper (optional)

Salt and pepper, to taste

1 cup vegetable oil, for frying

4 slices of hearty bread (like sourdough or ciabatta)

4 tablespoons mayonnaise

1 cup fresh arugula or lettuce

Optional: slices of avocado or crispy bacon

Instructions
 

Prepare the Green Tomatoes: Start by placing the sliced green tomatoes in a shallow bowl. Pour the buttermilk over them, making sure each slice is well-coated. Allow them to soak for about 30 minutes.

    Set Up Breading Station: In another bowl, combine the cornmeal, flour, paprika, cayenne pepper, salt, and pepper. Mix well.

      Bread the Tomatoes: After the tomatoes have soaked, take each slice and dredge it in the cornmeal mixture, pressing lightly to adhere the breading. Shake off any excess.

        Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat until shimmering. To check if it’s ready, drop a small piece of the breading into the oil; it should sizzle immediately.

          Fry the Tomatoes: Carefully place the breaded green tomatoes in the hot oil in batches. Fry for about 2-3 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

            Toast the Bread: While the tomatoes are frying, toast the slices of bread in another skillet or toaster until golden brown.

              Assemble the Sandwiches: Spread mayonnaise on one side of each piece of toasted bread. Layer with fried green tomatoes, fresh arugula, and if desired, slices of avocado or crispy bacon. Top with another slice of toasted bread, mayo side down.
