Ingredients

2 lbs chicken drumsticks

1/2 cup honey

1/4 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

2 tablespoons apple cider vinegar

1 tablespoon olive oil

1 teaspoon ground ginger

1 teaspoon black pepper

1 teaspoon salt

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Drumsticks: In a large mixing bowl, combine honey, soy sauce, minced garlic, apple cider vinegar, olive oil, ground ginger, black pepper, salt, and red pepper flakes (if using). Whisk until well combined. Add the chicken drumsticks to the bowl and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (ideal for about 4 hours) to allow the flavors to infuse.

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top of the baking sheet.

Prepare for Baking: Remove the marinated drumsticks from the refrigerator and let them sit at room temperature for about 10 minutes. This helps them cook evenly. Arrange the drumsticks on the wire rack, allowing space between them for air circulation.

Bake the Drumsticks: Bake in the preheated oven for 25 minutes. After 25 minutes, carefully brush the drumsticks with the remaining marinade and bake for an additional 15–20 minutes, or until the internal temperature reaches 165°F (75°C) and the drumsticks are golden brown and slightly crispy.

Broil for Extra Crispiness: Optional – For an extra crispy finish, switch the oven to broil for the last 2–3 minutes of cooking. Keep a close eye on them to prevent burning.

Garnish and Serve: Remove the drumsticks from the oven and let them rest for 5 minutes. Transfer to a serving plate, garnish with fresh parsley, and enjoy!
