Grilled BBQ Chicken Flatbread

2 large chicken breasts

1 cup BBQ sauce (your favorite kind)

4 pieces of flatbread (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1 cup corn kernels (fresh or frozen)

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

Salt and pepper to taste

Optional: sliced jalapeños for heat

Marinate the Chicken: Season the chicken breasts with salt and pepper. In a bowl, mix half of the BBQ sauce with the chicken, ensuring it is well-coated. Allow it to marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

    Grill the Chicken: Preheat your grill to medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C). Let the chicken rest for 5 minutes before slicing it into bite-sized pieces.

      Prepare Flatbreads: While the chicken is resting, heat a grill or skillet over medium heat. Brush each flatbread lightly with olive oil. Grill the flatbread for about 1-2 minutes on each side until they are lightly toasted and have grill marks.

        Assemble the Flatbreads: On each grilled flatbread, spread a generous amount of the remaining BBQ sauce. Top with sliced grilled chicken, a portion of corn, red onion slices, and mozzarella cheese.

          Melt the Cheese: Return the flatbreads to the grill, cover, and cook for another 3-5 minutes or until the cheese is melted and bubbly. If you're using jalapeños, sprinkle them on top at this stage.

            Garnish: Once the cheese is melted, remove flatbreads from the grill. Sprinkle fresh cilantro over the top before slicing into quarters.

              Serve: Serve hot, with extra BBQ sauce on the side for dipping if desired.
