Grilled BBQ Tofu Sandwich

Ingredients
  

1 block (14 oz) firm tofu, pressed and drained

1/2 cup BBQ sauce (your favorite brand or homemade)

1 tablespoon olive oil

4 whole grain sandwich rolls or ciabatta bread

1 cup coleslaw (store-bought or homemade)

1 medium avocado, sliced

1/2 red onion, thinly sliced

2 teaspoons smoked paprika

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Instructions
 

Prepare the Tofu: Slice the pressed tofu into 1/2-inch thick slabs. Pat dry with a paper towel to remove excess moisture.

    Marinate the Tofu: In a shallow dish, combine the BBQ sauce and smoked paprika. Add the tofu slabs and coat them thoroughly. Let marinate for at least 30 minutes, or up to overnight in the refrigerator for more flavor.

      Grill the Tofu: Preheat your grill or grill pan over medium heat. Lightly brush the grill with olive oil to prevent sticking. Once hot, place the marinated tofu slabs on the grill. Grill for about 5-7 minutes on each side, or until grill marks appear and the tofu is heated through.

        Toast the Rolls: While the tofu is grilling, slice the sandwich rolls in half. Place them cut side down on the grill for a few minutes until toasted, about 2-3 minutes.

          Assemble the Sandwiches: On the bottom half of each toasted roll, place a grilled tofu slab. Top with coleslaw, avocado slices, and red onion. Drizzle a little more BBQ sauce on top if desired, and sprinkle with salt and pepper to taste.

            Garnish and Serve: Close the sandwich with the top half of the roll. If you like, garnish with fresh parsley. Serve immediately with extra coleslaw or chips on the side.
