Grilled Caprese Avocado Toast

Ingredients
  

2 ripe avocados

4 slices of sourdough bread

1 cup cherry tomatoes, halved

8 ounces fresh mozzarella cheese, sliced

1 cup fresh basil leaves

2 tablespoons olive oil

1 tablespoon balsamic glaze

Salt and pepper to taste

Optional: Red pepper flakes for a little heat

Instructions
 

Prepare the Grill: Preheat your grill or grill pan to medium-high heat.

    Toast the Bread: Brush both sides of the sourdough slices with olive oil. Place the bread on the grill and toast for about 2-3 minutes on each side until crispy and grill marks appear. Remove from the grill and set aside.

      Mash the Avocados: In a bowl, scoop out the ripe avocados and mash them with a fork until creamy. Season with salt and pepper to taste.

        Grill the Tomatoes: In a small grilling basket, place the halved cherry tomatoes, drizzle them with a teaspoon of olive oil, and season with salt and pepper. Grill for about 5-7 minutes until they soften and slightly char, stirring occasionally.

          Assemble the Toast: Spread a generous layer of the mashed avocado onto each slice of toasted sourdough.

            Add the Mozzarella: Place slices of fresh mozzarella on top of the avocado layer.

              Top with Grilled Tomatoes and Basil: Add the grilled cherry tomatoes and a handful of fresh basil leaves on top of the mozzarella.

                Drizzle with Balsamic Glaze: Finish the toast by drizzling balsamic glaze over the assembled toast. For an extra kick, sprinkle a pinch of red pepper flakes if desired.
