Grilled Chicken Thighs

4 bone-in, skin-on chicken thighs

1/4 cup olive oil

Juice and zest of 1 large lemon

Juice and zest of 1 orange

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Optional: Fresh herbs and lemon slices for garnish

Instructions
 

In a mixing bowl, whisk together the olive oil, lemon juice, orange juice, lemon zest, orange zest, minced garlic, chopped rosemary, chopped thyme, smoked paprika, salt, and black pepper. This will be your marinade.

    Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Preheat your grill to medium-high heat (about 400°F/200°C). If using a charcoal grill, ensure you have a two-zone fire for direct and indirect grilling.

        Remove the chicken thighs from the marinade, allowing any excess marinade to drip off. Discard the leftover marinade.

          Lightly oil the grill grates to prevent sticking. Place the chicken thighs skin-side down directly on the grill. Grill for about 5-7 minutes, or until the skin is crispy and golden brown.

            Flip the chicken thighs and move them to indirect heat (if using a two-zone grill) or reduce the grill heat to medium. Cook for an additional 15-20 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

              Remove the chicken from the grill and let it rest for 5 minutes before serving. This helps keep the chicken juicy and flavorful.

                Garnish with fresh herbs and serve with lemon slices. Pair with a side of grilled vegetables, salad, or rice for a complete meal.
