Grilled Chicken with Avocado Corn Salsa

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

½ teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

For the Avocado Corn Salsa:

1 cup corn (fresh, frozen, or canned, drained)

1 ripe avocado, diced

1 small red onion, finely chopped

1 medium tomato, diced

½ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped (for heat)

Instructions
 

Prepare the Marinade: In a mixing bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, pepper, and lime juice until well combined.

    Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated well. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

      Make the Salsa: In a medium bowl, combine the corn, diced avocado, red onion, tomato, and cilantro. Drizzle with lime juice and season with salt and pepper to taste. If using jalapeño, add that as well. Gently toss to combine and set aside.

        Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it on the stove over medium-high heat.

          Grill the Chicken: Remove the chicken from the marinade and discard any excess marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

            Serve: Transfer the grilled chicken to a serving platter and let it rest for a few minutes. Top each chicken breast generously with the avocado corn salsa. Squeeze additional lime juice over the top if desired.
