For the Grilled Greek Chicken:

4 boneless, skinless chicken breasts

1/4 cup olive oil

3 tablespoons red wine vinegar

3 cloves garlic, minced

1 tablespoon dried oregano

1 tablespoon dried thyme

1 teaspoon salt

1 teaspoon black pepper

Juice of 1 lemon

For the Whipped Feta:

8 ounces feta cheese, crumbled

1/4 cup cream cheese, softened

1/4 cup Greek yogurt

2 tablespoons olive oil

2 tablespoons lemon juice

Fresh herbs (like dill or parsley) for garnish

Freshly cracked black pepper, to taste

Instructions
 

Prepare the Marinade:

    In a large bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, thyme, salt, pepper, and lemon juice.

      Marinate the Chicken:

        Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

          Make the Whipped Feta:

            In a food processor, combine crumbled feta cheese, cream cheese, Greek yogurt, olive oil, and lemon juice. Blend until smooth and creamy. If needed, adjust the consistency with a bit of water or additional olive oil. Season with black pepper to taste.

              Preheat the Grill:

                Preheat your grill to medium-high heat (about 400°F / 200°C).

                  Grill the Chicken:

                    Remove chicken breasts from marinade, letting excess drip off. Place the chicken on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

                      Rest the Chicken:

                        Once grilled, move the chicken to a plate and let it rest for 5 minutes to retain its juices.

                          Serve:

                            Slice the chicken and serve on a platter topped with generous dollops of whipped feta. Garnish with fresh herbs and additional lemon wedges if desired.
