Grilled Pineapple Teriyaki Burgers

For the Burgers:

1 lb ground beef (or ground turkey)

1/4 cup teriyaki sauce (plus extra for grilling)

1/4 cup breadcrumbs

1 clove garlic, minced

1/2 tsp ginger, grated

Salt and pepper, to taste

4 hamburger buns

For the Grilled Pineapple:

1 ripe pineapple, peeled, cored, and cut into 1-inch rings

2 tbsp brown sugar

1 tbsp soy sauce

1 tsp lime juice

For Serving:

Lettuce leaves

Slices of red onion

Slices of tomato

Optional: mayonnaise or sriracha mayo

Prepare the Grill: Preheat your grill to medium-high heat. If using a grill pan, preheat that as well on the stove with a bit of oil.

    Make the Burger Mixture: In a large mixing bowl, combine the ground beef (or ground turkey), 1/4 cup of teriyaki sauce, breadcrumbs, minced garlic, grated ginger, salt, and pepper. Mix until just combined. Avoid overmixing to keep burgers tender.

      Shape the Patties: Divide the mixture into four equal portions and shape them into patties. Use your thumb to make a small indent in the center of each patty to prevent them from puffing up while grilling.

        Prepare the Pineapple: In a separate bowl, mix together the brown sugar, soy sauce, and lime juice. Brush the mixture onto both sides of the pineapple rings.

          Grill the Patties: Place the burger patties on the preheated grill. Cook for about 4-5 minutes per side, or until they reach your desired doneness. Brush some extra teriyaki sauce on the patties while grilling to enhance the flavor.

            Grill the Pineapple: During the last few minutes of the burger cooking time, add the pineapple rings to the grill. Grill for about 2-3 minutes on each side until they are caramelized and have nice grill marks.
