4 large Portobello mushrooms, stems removed

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and black pepper to taste

4 whole grain or brioche burger buns

8 slices of fresh mozzarella cheese

1 cup fresh spinach or arugula

1 large tomato, sliced

1 avocado, sliced

Optional: pesto or hummus for spreading

Marinate the Mushrooms: In a large bowl, combine the balsamic vinegar, olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper. Whisk to create a marinade. Add the Portobello mushrooms and ensure they are well coated. Let the mushrooms marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

    Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium heat on your stovetop.

      Grill the Mushrooms: Remove the mushrooms from the marinade and place them on the grill, gill-side down. Grill for about 5-7 minutes, then flip and grill for another 5-7 minutes until tender and slightly charred. In the last minute of grilling, place two slices of mozzarella on each mushroom and close the grill lid until the cheese melts.

        Toast the Buns: While the mushrooms are grilling, lightly brush the burger buns with olive oil and toast them on the grill for 1-2 minutes until golden brown.

          Assemble the Burgers: On the bottom half of each toasted bun, layer some fresh spinach or arugula, followed by the grilled Portobello with melted mozzarella. Top with fresh tomato and avocado slices. If desired, add a spread of pesto or hummus for an extra flavor boost.
