Ingredients

1.5 lbs beef tenderloin

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 teaspoon smoked paprika

Fresh dill sprigs, for garnish

For the Creamy Dill Sauce:

1 cup sour cream

1 tablespoon Dijon mustard

2 tablespoons fresh dill, chopped

1 teaspoon lemon juice

Salt and pepper, to taste

Instructions

Prepare the Marinade: In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture all over the beef tenderloin, ensuring an even coating. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for deeper flavor.

Make the Creamy Dill Sauce: In another bowl, combine sour cream, Dijon mustard, chopped dill, lemon juice, salt, and pepper. Mix well until everything is thoroughly combined. Adjust the seasoning to your preference. Refrigerate until ready to serve.

Preheat the Grill: Heat your grill to medium-high heat, ensuring it is well-prepped for a good sear.

Grill the Tenderloin: Once the grill is hot, place the marinated tenderloin on the grill. Grill for about 6-7 minutes on each side for medium-rare doneness, or until it reaches your desired level of doneness. Use a meat thermometer to ensure the internal temperature is around 135°F (57°C) for medium-rare.

Rest the Meat: Remove the tenderloin from the grill and let it rest on a cutting board for 10 minutes. This allows the juices to redistribute, resulting in a more tender piece of meat.

Slice and Serve: After resting, slice the tenderloin into medallions. Arrange on a serving platter, drizzle with the creamy dill sauce, and garnish with fresh dill sprigs.

Enjoy: Serve the grilled tenderloin warm with your favorite sides, and enjoy the delicious blend of flavors!
