Ingredients

1 medium-sized seedless watermelon

2 tablespoons olive oil

1 teaspoon sea salt

1 teaspoon black pepper

1 teaspoon smoked paprika

1 tablespoon balsamic vinegar

Fresh mint leaves for garnish

Feta cheese (optional, for topping)

Lime wedges for serving

Instructions

Preheat the Grill: Begin by preheating your grill to medium-high heat. If you're using charcoal, let the coals turn gray and ashy before grilling.

    Prepare the Watermelon:

      - Cut the watermelon into 1-inch thick slices. Aim for at least 4 rectangular steaks that will hold their shape when grilled.

        - Pat the watermelon slices dry with paper towels to remove excess moisture, which can prevent good grill marks.

          Season the Watermelon:

            - In a small bowl, mix together the olive oil, sea salt, black pepper, and smoked paprika.

              - Brush both sides of each watermelon steak generously with the seasoned oil mix. This will add flavor and help achieve a nice sear.

                Grill the Watermelon:

                  - Once the grill is hot, place the seasoned watermelon steaks on the grates. Grill for about 3-4 minutes on each side, or until you see beautiful grill marks and the watermelon becomes slightly caramelized.

                    - Carefully flip the steaks using tongs to avoid breaking them.

                      Add Balsamic Flare:

                        - When the watermelon is nearly finished grilling, drizzle the balsamic vinegar over each steak and close the lid for an additional 1 minute. This will create a tangy glaze that enhances the sweetness of the watermelon.

                          Serve:

                            - Remove the steaks from the grill and let them rest for a couple of minutes.

                              - Optionally, crumble feta cheese on top for a salty contrast, and garnish with fresh mint leaves. Serve with lime wedges on the side for a zesty kick.

Enjoy: Indulge in your grilled watermelon steaks as a unique side dish at a summer barbecue, or as a light main dish with a salad!
