Guilt-Free Zucchini Brownie Bars

1 medium zucchini, grated (about 1 cup)

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 cup whole wheat flour (or almond flour for gluten-free)

1/3 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup dark chocolate chips (optional, for extra sweetness)

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. If it’s very watery, pat it dry with a clean kitchen towel to remove excess moisture.

      Mix Wet Ingredients: In a large mixing bowl, combine the grated zucchini, unsweetened applesauce, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until thoroughly mixed.

        Combine Dry Ingredients: In a separate bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. If desired, fold in the chocolate chips and chopped nuts for added flavor and texture.
