Ingredients

1 cup almond butter (smooth or crunchy)

1 cup rolled oats

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 cup almond flour

1/4 cup dark chocolate chips (or cacao nibs for a healthier option)

1/2 tsp vanilla extract

1/2 tsp salt

Optional: 1/4 cup dried fruit (e.g., cranberries or apricots) or nuts (e.g., chopped almonds or walnuts)

Instructions

Prepare the Pan: Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal. This will help in lifting the bars out once set.

Mix Wet Ingredients: In a medium bowl, combine the almond butter, honey (or maple syrup), melted coconut oil, vanilla extract, and salt. Whisk until smooth and well combined.

Combine Dry Ingredients: In a separate large bowl, mix the rolled oats, almond flour, dark chocolate chips, and any optional dried fruit or nuts you want to add.

Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Stir until everything is fully incorporated and forms a thick dough-like consistency.

Transfer to Pan: Scoop the mixture into the prepared baking pan. Using a spatula or your hands, press the mixture firmly and evenly into the pan.

Chill: Place the pan in the refrigerator for at least 1-2 hours, allowing the bars to firm up. This will help them hold their shape when cut.

Cut into Bars: Once set, lift the mixture out of the pan using the parchment overhang. Place on a cutting board and slice into desired bar shapes.

Store: Store the bars in an airtight container in the fridge for up to a week or freeze for longer storage.
