Healthy Carrot Oat Snack Bars

1 ½ cups rolled oats

1 cup grated carrot (about 2 medium carrots)

½ cup almond butter (or any nut butter of your choice)

¼ cup honey or maple syrup

¼ cup unsweetened applesauce

½ teaspoon cinnamon

¼ teaspoon nutmeg

½ teaspoon vanilla extract

¼ teaspoon sea salt

½ cup chopped walnuts or pecans (optional)

½ cup raisins or cranberries (optional)

1 tablespoon chia seeds (optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish with cooking spray or line it with parchment paper for easy removal.

    Mix dry ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, and sea salt. Stir in the chopped nuts, dried fruits, and chia seeds if using for added nutrition.

      Prepare wet mixture: In another bowl, whisk together the almond butter, honey (or maple syrup), applesauce, and vanilla extract until smooth and well combined.

        Combine mixtures: Pour the wet mixture into the dry mixture. Add the grated carrot and stir everything together until all the ingredients are evenly coated and combined.

          Bake the bars: Pour the mixture into the prepared baking dish and press it down evenly with a spatula. Bake in the preheated oven for about 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

            Cool and cut: Remove the baking dish from the oven and let it cool in the pan for about 10 minutes. Once slightly cooled, lift the bars out using the parchment paper and transfer them to a wire rack to cool completely. Once fully cooled, slice into bars.

              Store: Store the snack bars in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
