Healthy Chicken Taco Casserole

1 pound ground chicken

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1 cup cooked brown rice

1 cup shredded low-fat cheddar cheese

1 cup salsa

1 cup Greek yogurt (for topping)

1 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until fragrant and softened. Add the ground chicken to the skillet, season with salt, pepper, and taco seasoning, and cook until no longer pink, about 5-7 minutes.

      Combine the Ingredients: In a large mixing bowl, combine the cooked chicken mixture, black beans, diced tomatoes with green chilies, corn, and cooked brown rice. Stir in the salsa until everything is well coated.

        Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the chicken mixture evenly. Sprinkle half of the shredded cheddar cheese over this layer. Add the remaining chicken mixture on top, and finish with the rest of the cheese.
