Ingredients

4 medium zucchinis, sliced into half-moons

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried oregano

1 teaspoon dried thyme

1 tablespoon fresh parsley, finely chopped (for garnish)

Juice of ½ lemon

Instructions

Prepare the Zucchini: Wash the zucchinis thoroughly. Cut off the ends and slice them into half-moon shapes, about ½ inch thick.

Heat the Oil: In a large non-stick skillet, heat the olive oil over medium heat. Once hot, add the minced garlic to the skillet and sauté for about 30 seconds until fragrant, being careful not to burn it.

Cook the Zucchini: Add the sliced zucchinis to the skillet. Sprinkle with salt, black pepper, oregano, and thyme. Stir to combine, ensuring the zucchini is evenly coated in the oil and seasonings.

Sauté: Cook for about 5-7 minutes, stirring occasionally. The zucchini should be tender but still slightly crisp. Adjust the cooking time based on how tender you prefer them.

Add Lemon Juice: Once cooked, remove the skillet from heat. Squeeze the fresh lemon juice over the sautéed zucchini and toss well to combine.

Garnish: Transfer the zucchini to a serving dish and sprinkle with chopped fresh parsley for a fresh finish.

Serve Hot: Enjoy your zesty garlic herb sautéed zucchini as a side dish or a healthy main dish!
