Healthy Strawberry Oatmeal Bars

Ingredients
  

2 cups rolled oats

1 cup whole wheat flour

1/2 cup almond butter (or any nut butter of choice)

1/2 cup honey or maple syrup

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1 cup fresh strawberries, hulled and diced

1/4 teaspoon cinnamon (optional)

1/4 cup chopped nuts (optional, for added crunch)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, whole wheat flour, baking powder, salt, and cinnamon (if using). Stir well to ensure everything is evenly distributed.

      Combine Wet Ingredients: In another bowl, mix the almond butter, honey (or maple syrup), applesauce, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until fully incorporated. The mixture will be thick. If it feels too dry, add a splash of almond milk or water.

          Fold in Strawberries: Gently fold in the diced strawberries and chopped nuts, if using, making sure they are evenly distributed throughout the mixture.

            Transfer to Baking Pan: Spread the mixture evenly into the prepared baking pan to create an even layer. Press down firmly with a spatula to compact it slightly.

              Bake: Place in the preheated oven and bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Slice: Once done, remove from the oven and let the bars cool in the pan for about 10 minutes. Then, use the parchment overhang to lift them out of the pan and let cool completely on a wire rack. Once cooled, slice into bars.
