Ingredients

1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon garlic powder

3 large eggs

1 cup milk

⅓ cup vegetable oil

1 cup diced cooked ham

1 cup shredded cheddar cheese (or your favorite cheese)

¼ cup finely chopped green onions (optional)

½ teaspoon dried thyme (optional)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C) and grease or line a muffin tin with paper liners.

Combine Dry Ingredients: In a large bowl, mix together the flour, baking powder, salt, black pepper, and garlic powder until well combined.

Whisk Wet Ingredients: In another bowl, whisk together the eggs, milk, and vegetable oil until the mixture is smooth.

Incorporate Wet into Dry: Pour the wet mixture into the dry ingredients, stirring until just combined. Do not overmix; it’s okay if there are a few lumps.

Add Fillings: Gently fold in the diced ham, shredded cheese, green onions, and thyme (if using) until evenly distributed throughout the batter.

Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.

Bake: Bake in the preheated oven for 18-20 minutes or until the muffins are golden-brown and a toothpick inserted in the center comes out clean.

Cool: Remove from the oven and let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy warm or at room temperature. These muffins are perfect for breakfast on the go or as a hearty snack throughout the day!
