2 large eggs

1/2 cup honey or maple syrup

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1½ cups whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon (optional)

1 cup fresh or frozen blueberries

1/4 cup chopped nuts (walnuts or almonds, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), applesauce, and vanilla extract. Whisk until the mixture is smooth and well-blended.

      Combine Dry Ingredients: In another bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and cinnamon (if using).

        Combine the Mixtures: Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
